GREEN CHILLER WITH ARUCOLA AND SEEDS

Ingredients
- 1 pack of arugula
- 1 liter of Greek yogurt
- juice of 1 lemon
- a flat teaspoon of sea salt
- ½ teaspoon of white pepper
- 1 teaspoon of sugar
- 1 teaspoon of vinegar
Extras
- ½ pack of lamb’s lettuce
- 4 radishes slices
- a handful of sprouts
- 6 teaspoons of chives
- 6 teaspoons of sunflower and pumpkin seeds
- 6 teaspoons of pumpkin seed oil
Preparation
- Wash the arugula and drain excess water. Transfer to a blender together with half a pack of arugula, 200 ml of yogurt, lemon juice and other spices. Blend with a cup or hand blender until smooth. Combine with the remaining yogurt, stirring gently. We try to see if more seasoning is needed, if so, we add spices, e.g. salt and mix. Put in the fridge for 1 hour.
- Serve in a bowl with lamb’s lettuce, radish slices, sprouts, chives, seeds and a bit of pumpkin seed oil. Alternative healthy cold-pressed oil will also work great.
